Some coffee drinkers think dark roasts are stronger and have more caffeine kick than light roasts. The truth, however, is that caffeine content remains pretty much the same during each stage of the roasting process. The difference between roasts is taste, not the amount of caffeine.

Dark roasts, with their bolder, gustier taste are typically seen as carrying a more substantial caffeine punch than light roasts. However, the stronger-tasting brews aren't actually an indicator of their caffeine content. Light roast coffee has approximately the same caffeine content as dark roast coffee per bean.
Actually, the caffeine content in both is virtually the same. An opposing view held by many is that the darker the roast level, the lower a bean's caffeine since much of it is lost or "burned off" during roasting. Yet caffeine changes very little during a roast.

Roasting Process

That's because the coffee bean is not roasted at a very high temperature, which allows these notes to stay intact. Darker roast coffee beans are darker brown and oils are released onto the bean in the roasting process, which adds to the flavor. Generally, you get a smokier flavor (due to the high temperature).
In terms of aroma and flavour, Turkish coffee has a strong taste. Since the ground coffee beans are not filtered, some of it remains suspended in the drink. The very fine grind contributes to a thicker coffee and stronger taste compared to a regular cup of coffee. Turkish coffee is considered a moderate coffee.

Dark Roast Coffee Features
Unlike medium-dark roasts that have a bittersweet taste, dark roasts will have a substantial bitterness to their taste. This is also because the flavors from the bean's origin have been lost to the roasting process.

Light roast coffee
Light roast coffees are less bitter, more sweet, and often tea-like. They also often have the highest acidity.

Medium roasts typically make for the smoothest and most traditional tasting experience. The most preferred roasts in America fall into this range, and we recommend this roast if you are looking for a more conventional-tasting coffee.
Their report, presented here at the 239th National Meeting of the American Chemical Society, included the counter-intuitive finding that espresso, French roast, and other dark-roasted coffee may be easier on the tummy because these roasts contain a substance that tells the stomach to reduce production of acid.
Choose the one that suits your taste
If you prefer a more acidic, more subtle coffee that retains the character of the coffee beans, you're better off going with medium roast. If you prefer a less acidic, bolder coffee with the deep, rich taste often associated with traditional coffee, dark roast is your best option.
Darker roasts typically boast a bolder, richer flavor and aroma than lighter ones. Coffee beans lose caffeine and mass in the roasting process, so darker roasts generally have slightly less caffeine, though the difference is negligible.
Simply put, the lighter the roast the more complex the flavor! Light roast offers multilayered complexity, revealing traces of sweetness, fruit tanginess, or even a subtle floral aroma. Light roasts are lighter in body because the coffee bean has not been roasted long enough to produce caramelized sugars or oil.
The longer the roast goes on, the more oils appear as deeper structures in the bean break down. It's for that reason that dark roasted coffee tends to be more oily than light roasted coffee: the beans have had more time exposed to the high temperatures inside the drum.
In fact, it has many health benefits. Turkish coffee is rich in antioxidants, which help protect your cells from damage. It also contains caffeine, which can improve mental alertness and memory. Turkish coffee is also good for lowring cholesterol levels which is essential for healthy blood cells.
